Xanthan Gum

Description
Xanthan gum is a natural biopolymer produced by fermentation of sugar, dextrose, corn syrup or starch by Xanthomonas campestris. Xanthan gum is used as a stabilizer in many applications to provide excellent particulate suspension, emulsion stability, viscosity, moisture retention, and freeze-thaw stability.

Properties
Xanthan gum is soluble in both hot and cold water. The key advantages to using xanthan gum are that it imparts high viscosity solutions at low concentrations, it is stable over a wide range of pH levels and temperatures, and it is compatible with applications containing salt and enzymes.

Solutions of xanthan gum exhibit a pseudoplastic rheology; as shear forces are increased, the viscosity decreases and as shear forces are decreased, the apparent viscosity increases again. This characteristic is employed to suspend particles at rest and stabilize emulsions while promoting ease of pumping and pouring.

Xanthan gum is synergistic with locust bean gum and tara gum to form thermoreversible gels, and with guar gum to provide enhanced viscosity.

Xanthan 40
A coarse, low dust product that is easy to disperse, thus improving environmental safety and making it easy to use where minimal agitation is available.

Salad dressings and sauces 0.15% to 0.50%

Xanthan 80
A standard mesh product that is easy to disperse and hydrates rapidly.

Salad dressings and sauces 0.15% to 0.50%

Xanthan 8020
A specialty 80 mesh product with controlled "fines". Xanthan 8020 exhibits minimal dust, excellent dispersion, and rapid hydration.

Xanthan 200
A fine mesh product with very rapid hydration making it suitable for dry mix formulations.

Bakery Mixes 0.10% to 0.30%
Dry mix beverages, gravies, desserts, and seasoning mixes 0.10% to 0.25%

Quik-xan:
An agglomerated product that provides a combination of easy dispersion, rapid hydration, and very low dust.

Xanthan CG
Cosmetic grade xanthan that meets the specifications set forth in NF/USP. Suitable for cosmetic and personal care applications.

Packaging
Twenty-five kilogram bags. (Exception: Quik-Xan is packaged in 20 kilogram bags)

Shelf-life
Re-certify specifications after 2 years. Store properly sealed in a cool, dry environment.
